Eggplant Casserole

Ingredients
1 medium peeled eggplant, cubed8 oz. sliced mushroomsI large onion roughly chopped1 bell pepper roughly choppedGarlic to taste1 large can of crushed tomatoesSalt, pepper, basil and oregano to taste
Directions
Combine all the ingredients in a casserole dish. Cover and bake at 350 for one hour or until eggplant is tender. Serve over rice or pasta (which isn't included in nutritional calculations). Makes about 6 1 cup servings. You could also put this in a slow cooker.
