Non-Traditional Caprese Salad

3 Roma tomatoes, cubed50 g Mozzarella cheese, low fat2 T Fresh basil, slivered.75 C Red kidney beans, rinsed and drained.5 T Olive oil, or to taste4 T Balsamic vinegar, or to tasteSalt & pepper, to taste
Sliver the basil, cube the tomatoes.
Rinse and drain the kidney beans and mozzarella.
Combine all ingredients in a large enough bowl, add oil and vinegar.
Toss to coat.
This is even better the next day once it's marinated!
