Black Beans with Cumin

1/2 lb dried black beans, soaked overnight1 medium onion, roughly chopped3 fresh garlic cloves, pressed1/2 tsp dried oregano leaves1/2 tsp ground cuminpinch of red pepper flakes2 tsp sugar2 Tbs white wine vinegarsalt and pepper to tastechopped scallions for garnish
Rinse beans that have soaked. Cover with 3 cups of fresh water and bring to a boil over high heat. Reduce the heat and simmer covered for 30 minutes. Skim off any foam. Stir in the onion and simmer 30 minutes more. Add the garlic oregano, cumin, and red pepper flakes, and simmer uncovered for 30 minutes more, stirring ocassionally. Stir in sugar and vinegar and taste. Season with salt and pepper to taste and garnish with chopped scallions.
