Great with browned chicken

Ingredients
boneless, skinless chicken breast2 tbsp extra virgin olive oil1 whole green bell pepper (sliced thin)1 med spanish onion, diced1 tsp garlic, minced ( I used the ready made stuff)1 can of diced tomatoes (use whatever flavour you like)1 tsp dried oregano flakes1/4 tsp salt
Directions
*heat oil in skillet. brown chicken both sides and set aside
*add pepper, onion and garlic into skillet-sautee until veg are soft
*add diced tomatoes, oregano, salt and bay leaf, mix
*add chicken back into sauce, cover and let it simmer 30-40 minutes
