Stuffed Peppers (grain-free! low carb!)

Ingredients
2 cups roasted cauliflower, grated or minced (roast at 450F for 30 minutes with salt and pepper)6 oz mahi mahi or chicken, cooked and diced1/2 small onion1/3 cup diced tomatoes1/4 cup tomato sauceitalian seasoning to taste2 cloves garlic, pressed or minced2 small green bell peppers, halved; or 1 extra-large one for an entree
Directions
Mix all ingredients except bell peppers together in medium bowl. Spoon into bell pepper halves and bake in 350F oven for about 30 minutes, until peppers are soft and filling is heated through.

Serve as a side dish if you made 4, or as a main dish if you made 2.
