Low Sodium Lentil Chili

1 Tbsp Olive Oil2 Cloves Garlic1 Large Onion14.5 oz can Diced Tomato, No Salt Added1 Tbsp Chili Powder2 Tsp Ground Cumin1 Tsp Ground Oregano5 Cups Water1 Cup Lentils
Place the olive oil in a large saucepan, over medium heat.
Add the garlic and onion and cook, stirring frequently, until the onions have softened.
Add the diced tomatoes, chili powder, cumin, oregano, and pepper (to taste), and stir well.
Add the five cups of water and the lentils, and stir well.
Reduce heat to medium-low and simmer until lentils are cooked through but not mushy, approximately 45 minutes to an hour.
Serve with 1 tablespoon sour cream and 1/2 ounce Monterey jack cheese per 1 1/2 Cup serving of Lentil Chili.
