Apple Pecan Muffins

Ingredients
Add oats into buttermilk. Let soak 10 min. Add grated apples and pecans. In another bowl, cream butter, shortening, and brown sugar; beat in egg. Combine with oat mixture . Sift together flour, baking powder, salt, soda and cinnamon. Add oat mixture. The batter will be lumpy. Divide batter between 12 greased regular muffin size pans.
Directions
Cook 25 to 30 min. in 400 degree oven. I usually put in 24 smaller size muffin pans. Therefore, cooking time will be shorter.
