Chocolate Almond Oatmeal Muffins

2 cups quick oats1 cup whole wheat flour3/4 cup Splenda2 tsp cinnamon3 tbsp unsweetened cocoa powder1 tsp baking powder1 tsp baking soda1.5 cups fat free milk1/4 cup unsweetened applesauce1 tsp vanilla1/2 cup egg beaters1/2 cup unsalted (plain) almonds
Preheat oven to 425 degrees. Spray muffin cups with cooking spray.
Grind oats in a food processor for about 30 seconds.
Combine grinded oats, flour, splenda, cinnamon, cocoa, baking powder and baking soda in large bowl.
In separate small bowl, combine milk, applesauce, vanilla, and egg beaters. Once mixed, add liquid ingredients to dry ingredients and stir until blended.
In food processor, grind almonds. Stir into other ingredients. Fill muffin cups.
Bake at 425 degrees for 5 minutes, then reduce oven temperature to 400 degrees and bake for an additional 15 minutes.
