Mexicali Hamburger Casserole

Ingredients
1.5 lbs ground turkey2 bell peppers diced (1 red, 1 gr)1c frozen corn8oz shredded cheese1/2 c all purpose flour1/2 c cornmeal1 1/4 tsp baking powder1 egg, beaten2/3 c milk2 tbsp cooking oil
Directions
Preheat oven to 350F. Brown turkey w/ diced peppers, drain. Add corn, beans, tomatoes and heat through. Pour mixture into 3 qt casserole dish. Sprinkle most of cheese over meat mixture. For cornbread topping, mix together dry ingredients and wet ingredients separately, then mix together and pour over meat mixture. Sprinkle rest of cheese on top and bake for 30 minutes at 350 F.

Garnish w/ a dressing of 1c halved grape tomatoes, 1/2c corn and 1/4c chopped fresh cilantro and serve.
