Beef casserole w/ Bisquick Dumplings

Ingredients
ground beef (turkey could be used)onion, finely sliced or choppedcream of mushroom soupfrozen veg blend of your choice1 pack instant mashed potatoes1 cup bisquick1 cup hot milk
Directions
preheat oven to 400
saute onions in frying pan over med heat, add ground beef and cook until browned, drain. Add cream of mushroom soup, .5 cup water, and frozen veggies, stir well to combine. Pour into 9x9 baking dish.
Meanwile, mix dry bisquick and package of instant mashed taters in bowl. Add 1 cup HOT milk and mix well. let sit at least 2 min.Drop by heaping spoonfuls over casserole, about 10 total. Spritz with buttery spray, sprinkle w/ parsley.
Bake in 400 degree oven until dumplings are browned on top. Let sit 5 min and serve, 2 dumplings to a serving.
