Lemon poppyseed muffins

2 cups sugar1 cup unsalted butter, softened3 cups flour2 tsp baking powder1/2 tsp salt3 eggs2 tsp vanilla extract1 cup skim milk2-4 tbsp lemon zest (or lemon oil)1/4 cup poppy seeds---------------------------------Glaze2 tbsp unsalted butter (melted)1/4 cup lemon juicelemon zest to taste4-5 oz confectioners sugar (enough to make thick glaze)
Preheat oven to 350 F. Sift flour, baking powder, and salt; add poppy seeds and set aside. Cream butter and sugar. Add eggs. Add dry ingredients alt with milk/vanilla. Add lemon zest/oil. Fill lined muffin tins. Bake at 350 F for 25-30 mins. Make glaze by adding all ingredients together. Dip tops into glaze and let dry.
