Red Beans & Rice with andouille sausage

Ingredients
andouille sausage, red beans, yellow onion, bell pepper, celery, thyme, garlic, shallots, olive oil
Directions
Heat olive oil. Add onion and saute until translucent. Add shallots and garlic and saute 1 minutes. Add sliced sausage. Saute 2-3 minutes. Add beans (soaked overnight) and water to cover. Simmer 1.5 hours. Add bay leaf, thyme, bell pepper, paprika, and hot sauce. Simmer for another hour. Serve over rice. Makes 8 servings.
