red (masoor) lentils, 1/2 cup ground Pepper, red (spice) , 1 tsp Garlic, 3 tsp Turmeric, ground, 1 tsp Salt, dashOnions, raw, 1 cup, chopped Peppers, sweet, red, fresh, 1 cup, sliced ground Pepper red(spice), .25 tsp .5 tsp dried cumin seeds.
preheat oven to 400 degrees.
arrange peppers and onion in a single layer on a non-stick cooking sheet, sprinkle with 1/4 tsp ground red pepper, and 1/2 tsp dried cumin seeds.
Over high heat, put the lentils, garlic, 1 tsp ground red pepper, turmeric, and dash of salt in a heavy saucepan with 2 cups water. Put put the tray with the onions and peppers in the oven. Once lentil mixture has reached a full rolling boil, turn heat down to medium and continue simmering with the lid on for about 30 minutes, checking frequently, adding water as needed to achieve desired consistency. remove from heat once lentils are soft, and have a mushy texture. Remove onions and peppers from oven once they are soft, and the edges of the onion are starting to brown (about 30 minutes).
Serve as is, or over basmati rice with the onion and pepper mixture as a garnish on the top. More or less ground pepper may be added to taste, depending on how spicy you like things.
