Crock Pot Lentil Soup

Ingredients
1 cup dry lentils1 cup chopped celery1/4 cup chopped onion1 cup chopped bell peppers2 cloves garlic1/2 tsp dried basil1/2 tsp dried oregano1/4 tsp dried thyme1 Tbsp dried Italian Seasoning1 bay leaf2 14 1/2oz cans vegetable or chicken broth1 1/2 cups water1 14 1/2oz can no added salt diced tomatoes (undrained)OPTIONAL: 1/4 cup snipped fresh parsley2 tablespoons cider vinegar
Directions
Rinse lentils. Add all ingreedients (except optional ingreedients) to crockpot and stir.

Cover; cook on low heat setting for 12 hours or high heat setting for 5-6 hours. Discard bay leaf. Stir in parsley and vinegar if desired.
