Portabella Pizza

Ingredients
Four (4) Portabella mushrooms, stems removedFour (4) Garlic cloves, minced (one per cap)Approx. Twenty-four (24) Pepperoni slicesTwo (2) Roma tomatoes, thinly slicedApprox. One (1) cup Shredded mozzarella cheeseApprox. One (1) cup Shredded parmesan cheeseRemaining mushroom stems, choppedTwo (2) Tbsp Fresh basil, finely choppedOne (1) tsp Fresh thyme, finely choppedOne (1) tsp Ground black pepper
Directions
Lightly oil baking sheet.
Remove stems from mushroom caps and place on sheet.
Layer minced garlic, thinly sliced tomatoes and pepperoni on caps.
Chop the remaining stems and mix in with cheese, herbs and pepper and top the caps with the mixture.
Bake for about 5 minutes at 350 degrees, then place as close to broiler as possible to brown cheese to your liking.
Makes four (4) pizzas.
