White Rice, long grain, measured 1 cup before cookingOlive Oil, 1 tbsp Broccoli, fresh, 1/2 - 1 cup floretsPeppers, sweet, red, raw, diced, 1/2 -1 cup Scallions, raw, .3 sliced including green topsGinger Root, 1 tsp gratedSesame Oil, 2 tbsp - more for tasteLite Soy Sauce, 4 tbsp - more or less for taste1-2 packets splendaCan use Brown or Jasmine rice....change veggies around..mix it up
Cook 1 cup rice per direction on package. meanwhile, prepare remaining ingredents.
let rice cool
heat olive oil in large skillet, add rice, stir-fry aprox 3 min.
remove rice to bowl, add remaining ingredents to the pan. Stir-fry aprox 3 min.
add rice, add more soy sauce and/or sesame oil if needed.
stir, cover, let flavors mingle
