Banana Whole Wheat Bread

2 1/2 Cups Whole wheat flour1 1/2 Cups mashed very ripe bananas1 1/4 Cups packed brown sugar2/3 Cups plain yogurt ( you can use nonfat also )1/2 Cup fat free egg product or 2 Eggs1/3 Cups Vegetable oil1 Teaspoon baking soda1 Teaspoon salt1 Teaspoon vanilla
Move oven rack to the lowest position. Heat oven to 350 degrees. Grease bottom only of two 8x4 inch loaf pans or one 9x5 inch loaf pan. I have also used a muffin pan.
Stir together all ingredients until blended. Pour into pans.
Bake 8 inch loaves 50-60 minutes . Let cool for 10 minutes. Loosen sides of loaves from pans. cool completely before slicing. Wrap tightly and store at room temp. 24 slices per loaf.
