Gramma Nolan's Chicken Escarole Barley Soup

Ingredients
3 lbs skinless chicken breast (best to slow bake/roast in chicken broth @ 350 degrees for 1 hour covered then cubed)12 Cups - College Inn Chicken Broth - 99% Fat Free5 Cups - Escarole Lettuce (fresh)1 Cup - pearled, raw Barley
Directions
Bake/roast chicken breast in 1 cup broth, covered 350 degrees for 1 hour.

Clean all visible fat off chicken, cube and add chicken and roasted broth to broth in 4 qt pot.

Heat to boil, add Barley; place on low/simmer covered for 1 hour (add more broth as desired/needed)

Chop Escarole to bite size pieces and add to soup. Stir and simmer another 10 minutes.

Recommend serving with freshly grated parm cheese on top!
