Oatmeal Cookie Sandwiches

1 cup butter, margarine, etc.1 cup Splenda2 large eggs1/4 cup 2% milk3/4 tsp baking soda1 cup old-fashioned oats (steel cut, rolled, etc.)1 tsp ground cinnamon(optional: 1 tsp vanilla)2 1/4 cup marshmallow fluff
Preheat your oven to 375 Fahrenheit.
Cream butter and Splenda until smooth. Add eggs, vanilla (if used) and milk, mix well.
Add the flour, baking soda, oats and cinnamon, mix until all dry ingredients are moistened.
Drop by well rounded teaspoon onto a greased cookie sheet.
Bake oatmeal cookies for the allotted time or until lightly brown. Do not over bake cookies.
Allow cookies to cool until slightly warm, then spread 2 tbsp marshmallow fluff between the two cookies.
Recipe yields about 36 cookies, or 18 cookie sandwiches. 1 serving size is (approximately) 2 cookies with 2 tbsp fluff.
