Hearty Healthy Chilli (abs diet friendly)

2 tablespoons olive oil1 1/2 cups chopped onions (or frozen)8 large garlic cloves, chopped3 pounds lean ground beef5 tablespoons Mexican chili powder2 tsp cayenne pepper1 teaspoon dried basil1/2 teaspoon dried oregano1/2 teaspoon dried thyme1 14.5oz can diced mexican fiesta tomatoes 1 14.5oz can stewed Mexican style tomatoes2 tsp low sodium better than bouillon chicken base plus 2cups of water1 1/2 5.5oz can low sodium V8 juice1 15oz can prepared blackbeans (be sure to drain and rinse them)1 4oz can fire roasted green chillis3 large whole mushrooms3 cups fresh spinach
Preparation
Heat oil in heavy large pot medium-high heat. Add onions and garlic. Sauté until onions are translucent, about 8 minutes. Add meat and sauté until brown, breaking up meat with back of spoon, about 5 minutes. Add chili powder, cayenne pepper, basil, oregano and thyme. Stir 2 minutes. Mix in tomatoes, chicken base & water, and v8 juice. Simmer until thickened to desired consistency, stirring occasionally to prevent sticking, about 45 minutes. Mix in beans and spinach. Simmer 5 minutes. Season to taste with salt and pepper. (Can be prepared 3 days ahead. Refrigerate until cold, then cover. Rewarm over low heat before serving.)
