Oven Fried Panko Chicken

8 boneless, skinless chicken breast halves2 cups Panko (Japanese bread crumbs) 1 stick unsalted butter, softened (or 6 egg whites)2T cayenne pepper2 tsp salt2 tsp black pepperRed pepper flakes to taste
Preheat oven to 450 degrees. Rinse and dry chicken. In one bowl, mix the Panko, 1T cayenne, 1 tsp salt, 1 tsp black pepper, and red pepper flakes to taste. In another bowl, mix the butter, 1T cayenne, 1 tsp salt, 1 tsp black pepper, and red pepper flakes. Brush both sides of chicken breasts with the butter mixture (or dip in egg whites). Dip each chicken breast in Panko mixture, covering both sides equally. Place chicken breasts in two shallow baking dishes sprayed with Pam. Bake for 30-40 minutes until browned and chicken is fully cooked.
