Frittata-A La Hillary

Ingredients
6 egg whites1 egg4 brussesl sprouts shredded1/2 of a large zucchini sliced then chopped into thing strips4 shallots diceda splash of fat free milka dash of salt1 tablespoon of olive oil2 Ounzes crumbled goat cheese
Directions
1. Preheat oven to 400 degrees.

2. Add 6 large egg whites and one egg to a bowl.

3. Add a dash of salt and a splash of fat free milk to the bowl and wisk until incorporated. Then set aside.

4. Add a 1/2 of the tbls of olive oil to a pan and let the pan get hot. Saute the shredded brussel sprouts.

5. Remove the brussel sprouts once they start turning brown and set aside. Add a the rest of the oil and add the zucchin.

6. Once the zucchini is getting soft add the shallots.

7. Once the shallots begin to brown remove the pan from the heat and add the egg mixture.

8. Add the crumbled goat cheese on top spreading it around.

9. Place the skillet in the oven for 15-20 minutes until it is all set.

10. Remove from the oven and serve.
