Chilli & Ginger Sweet Potato Soup

1 large onion, sliced4 green chillies, deseeded and chopped2 cloves garlic, crushed4" fresh ginger, peeled and chopped1tsp ground cumin,2 tsps ground corriander1 litre stock made with chicken Bovril500 grams potatoes500 grams sweet potatoes200 ml. light coconut milkjuice and zest of one limeFry Light or other 1 cal cooking spray
Saute onion in Fry Light until soft. Add in the garlic (finely chopped), chillies (deseeded and chopped) and ginger (peeled and chopped). Add in the spices, stir, and cook a few minutes.
Add the chopped potatoes, sweet potatoes and the stock, bring to a boil, then simmer gently until potatoes cook through. Cool the soup and blend until smooth.
Return the blended soup to the pan and reheat, adding the coonut milk and lime juice and zest.
