Lentils and Rice with Carmelized Onions

Ingredients
1 cup lentils1 cup Jasmine Rice (or other long grained rice)1 onion (large)2 tbsp oil 3.5 cups waterSpices:1.5 tsp turmeric 1 tsp. cayenne pepper (or more to taste, I like it with 2 tsp.)1 tsp. salt0.5 tsp curry0.5 tsp cumin
Directions
1. Place lentils in pot with water, bring to boil - cover and simmer for 15 minutes.
2. Meanwhile add chopped onion to frying pan with heated oil. Continue grilling until the onions become brown (about the time it takes to boil the lentils - you can grill them for longer if desired, the browner the onions the more carmelized the taste will be)
3. Add spices and grilled onions to simmering lentils.
4. Add rice and stir well. Make sure there is enough water (it should barely cover the top)
5. Bring to a boil, cover and reduce heat to simmer for 20 minutes.
6. Take pot off the heat and let sit for 5 minutes.
7. Enjoy!
