Ginger Macaroons

4 cups - Shredded Coconut (UNSWEETENED)5 - egg whites1/2 cup - Sugar1 1/2 cups - Splenda1/4 cup - Ground Ginger (FRESH)water
Preheat oven to 350 F
combine sugar and splenda in a sauce pan.
Add enough water to dissolve the sugars.
boil down until the mixture until the syrup is the consistency of hot maple syrup.
allow the syrup to cool slightly.
Mix egg whites, simple syrup, and ginger together in a large bowl
slowly add coconut flakes until it's evenly blended.
Drop into 1" rounds onto a sheet lined with parchment paper.
bake 10-15 minutes until the tops are golden brown.
let cool 2-5 minutes, then remove from the sheet.
This will make 70 1" cookies.
