2 1/2 cups liquid egg whites ("just whites")10 Organic Prairie Brown & Serve Pork links(for a lighter version- use a low fat turkey sausage or veggie sausage links)
Poach sausage links in water until plumped. Allow water to boil away and brown casings (total cooking time- about 5 minutes). Slice sausages into bite size pieces and transfer to a large nonstick muffin tin ( I used a mini loaf pan), Cover sausages with liquid egg whites and bake until firm and puffy. Can be stored in the fridge for several days and reheated in the microwave covered for about 30 seconds. Enjoy!
