Cooked Rice Cakes w/Sauce

Ingredients
2 cups brown rice (or any rice of your choice, but brown works best)1 large egg2 tbsp white flour1 tsp paprika or cayenne pepper1 tsp parsley1 tsp kosher salt1/4 tsp fresh ground pepper2 tbsp. Extra-virgin olive oil (EVOO)For Sauce:2 tbsp sour cream2 tbsp mayonnaise2 tbsp ketchup1 tsp Shriracha (Japanese Hot Sauce) - Optional
Directions
Cook the rice according to package directions, and then place in a large bowl. Add the egg, beaten, to the cooked rice and mix. Add in flour, paprika or cayenne pepper, parsley, salt and ground pepper. Mix well.

Heat EVOO in a pan on medium heat. Fry 1/4 cup portions of the rice mixture, flipping when golden brown.

For sauce, combine the sour cream, mayonnaise and ketchup and mix well. Top the cooked rice cakes with equal amounts of sauce.
