EscaroleCollege Inn Light and Fat free Chicken BrothExtra Light Virgin Olive OilHarvest Chicken Italian Sausages with Peppers & OnionsGarlicCannelli BeansSalt Pepper
Quickly saute garlic in oil in the bottom of a large stock pot. When browned add some chicken stock and chopped escarole to the pot. Cover the pot and let the escarole steam down. Add the rest of the stock and continue to cook until escarole becomes soft. Add Cannelli beans and let soup simmer until it the leaves are well cooked. While soup is simmering cook sausages thoroughly. When done cut into slices and throw into soup pot. Let simmer a while longer as the flavor from the sausage will enhance the soups flavor. Makes 23- 1 cup servings
