Chocolate Dipped Frozen Bananas

Ingredients
8 medium bananas, peeled 16 wooden popsicle sticks 32 oz semisweet chocolate, chopped or chips 4 tbsp unsalted butterDipping decorations: granola, chopped nuts, sprinkles, jimmies, crushed cookies, and toasted coconut
Directions
Line a sheet pan with waxed paper. Cut each banana in hald across. Insert a popsicle stick into the cut-end of each banana, pushing the stick halfway in, leaving the other end exposed for use as a handle. Place the bananas on the sheet pan and freeze 1 hour.

Melt the chocolate and butter in a bowl over a saucepan of simmering water (or a double boiler), stirring occasionally. Make sure that no water gets into the chocolate mixture or it will cause it to seize or clump up, but can be fixed by adding a few teaspoons of oil to the chocolate.

Dipping decorations: granola, chopped nuts, sprinkles, jimmies, crushed cookies, and toasted coconut

Arrange the dipping decorations on several flat plates. Working with 1 banana at a time, dip it in the chocolate and turn to completely coat (spoon some on, if needed). Roll the dipped banana in the desired decorations, transfer to the sheet pan, and return to the freezer.

Once frozen, store the bananas in an airtight container.

OPTIONAL: Dip the bananas and put them back in the freezer - not touching. And serve them out to guests at a kids' party, allow kids to decorate their own banana... dip the banana and hand it over to them to finish. YUM!

From start to finish, it takes about 1 hour 30 minutes to complete.

    This is a great dessert! Since I don't have a double boiler I used a saucepan and the chocolate hardened too fast. I ended up scooping it on with a spoon as fast as I could. Next time I'm going to melt chocolate chips in the microwave or use a little chocolate syrup instead. It was yummy though! - 12/6/09
