Lentil-Barley Stew

Ingredients
2 C vegetable soup stock3/4 C lentils (brown)1/4 C barley2 med. carrots, chopped1 clove garlic1 large stalk celery with leaves, diced1 t onion powder2 C V-8 juicesprinkle curry
Directions
In a soup pan, bring soup stock, letntils, barley and veggies to a boil. Reduce heat to lowest temperature, cover, and simmer 35 minutes. Add the V-8 juice and curry to taste, cover and simmer 30 minutes.

Yield: 3-1/2 C stew
