Mexican-Style Shrimp Cocktail

8 oz. Clamato juice Juice of 1 lemon1/4 c. ketchup1 c. shrimp or vegetable stock1 lb. cooked shrimp1 c. cucumbers, peeled and seeded, diced1 small red onion, diced1 medium tomato, diced and seeded1 avocado, diced1 tsp. minced jalapeno (or to taste)1 Tbsp. minced cilantro (or to taste)1 Tbsp minced parsley (optional)
1. Combine Clamato, lemon juice, ketchup and shrimp or vegetable stock and refrigerate.
2. Place equal parts of shrimp into a serving glass. Layer cucumber, red onion, tomato, avocado, and jalapeno over shrimp. Add another layer of shrimp and another layer of vegetables. Pour ketchup mixture over the shrimp and sprinkle with cilantro and parsley.
