Lentil Vegetable Tomato Soup

Ingredients
2 cups lentils, raw and uncooked1/2 c onion, chopped1/2 c celery, diced1/4 c carrot, chopped3 Tbs. Parsley, chopped (or substitute 1 Tbs. dry)1 clove garlic, minced 8 cups chicken broth (can use low sodium)1/4 tsp black pepper1/2 tsp dried oregano2 cups canned tomatoes, diced2 Tbs. wine vinegar2 links smoked sausage (optional)
Directions
Rinse lentils. Put everything except the tomatoes, vinegar and sausage (if using) in a soup pot.. Cook on medium for 45-60, or until the lentils are cooked. Add the tomatoes, wine vinegar and sausage. Cook an additional 15-20 minutes.
