Healthy breakfast muffins

1 1/2 C whole wheat flour3/4 C Flax seed meal3/4 c oat flour1/2 c brown sugar1/2 c vanilla protein powder 2 tsp baking soda1 tsp baking powder1/2 tsp salt2 tsp vanilla1/2 c shredded apples1 c shredded carrots1/2 c raisins (or other dried fruit)1 c sliced almonds1 c skim milk1/3 c honey2 egg whites1 tsp almond extract1 c coconut (optional)
Mix all dry ingredients in large bowl. Add carrots, apples, nuts, almonds, raisins and coconut and toss together. In separate bowl, combine remaining ingredients. Gently fold wet ingredients into dry ingredients until just moistened (do not over mix). Drop into prepared muffin tins (greased or with muffin cups). Bake at 350 for 15-18 minutes.
Makes 24 medium sized muffins.
