Floridian Mustard Greens

Ingredients
1 bag Glory Raw Mustard Greens2 chopped celery stalks2 slices pancetta2 tbsp olive oil5 tbsp sour orange juice1 tbsp black pepper2 packets of stevia1/2 cup apple cider vinegar
Directions
Chop celery and pancetta and brown in the olive oil in a cast iron pan on medium heat. You want the pancetta to render its flavor. Once it starts to crisp up, I would remove any remaining fat.

Stir in sour orange, vinegar, and spices.

Slowly add in greens until they are cooked down.

Reduce heat to simmer and let reduce for 20 min.

Makes 9 1/3-cup servings.

    Replace sugar with 1 Splenda packet. Remove pancetta & OJ. Reduce oil to 1 T. Reduce black pepper to 1/4 t. Add 1/4 t of red pepper. - 3/20/12
