Ingredients
1 can Del Monte Petite Cut Diced Tomatoes undrained1 cup chopped onions1 chopped yellow bell pepper1/2 cup hot salsa2 tablespoons capers drained2 tablespoons balsamic vinegar3 cloves garlic, minced1 tsp oregano ground4 tablespoons basil1 medium eggplant, peeled and cubed2 tablespoons extra light olive oil
Directions
Mix and put in slow cooker on low for 7 hours or until vegetables are tender
