Massaman Chicken Curry

Ingredients
1 medium onion -- chopped2 cloves garlic1 teaspoon ginger root1 teaspoon five-spice powder1 teaspoon cumin1/4 teaspoon cayenne pepper1/4 teaspoon turmeric1 teaspoon salt1 cup chicken broth1/2 cup fat free half-and-half1/2 teaspoon coconut extract1/2 pound potato -- diced 16 ounces chicken breast halves without skin -- diced in 1/2" dice1 ounce peanuts1/2 pound tomatoes -- chopped 3 tablespoons cilantro cooking spray
Directions
Generously spray large saucepan with cooking spray and heat over moderately low heat. Add the onion and cook until translucent, stirring occasionally. Add garlic, ginger, five spice power, cumin, cayenne, tumeric and 1/2 teaspoon on the salt. Stir until fragrant, about one minute. Whisk in the broth and the half and half, bring to a simmer. Stir in the potatoes, cover and cook over low heat until they are almost tender, about 12 minutes. Add chicken to the sauce, cover and simmer for 5 minutes. Stir in the peanuts, tomatoes, extract, the remaining 1/2 teaspoon salt, and cilantro. Turn off the heat, cover and let steam until the chicken
