1 whole wheat pita pocket bread (2 oz. size)2 tablespoons of tomato paste1/4 cup goat cheese crumbles (.25 cup)1/4 teaspoon garlic powder (.25 tsp)1/4 teaspoon onion powder (.25 tsp)1/4 teaspoon pepper (.25 tsp)1/2 packet of calorie free sweetenerOPTIONAL: salt (not included in recipe calculation)I highly recommend using minced garlic like spice world in the jar. Fresh ingredients on this really make it better. I just wanted to put out an idea for everyone. This is one of those adjustables where the main thing is that sweet sauce cut with the taste of the cheese! At times I use an entire packet of sweetener. It comes out really good. Try provencal crumbles too.I get it for only a couple bucks so I can splurge!
Set aside 1 pita pocket bread. In a small container or bowl combine listed amounts of tomato paste, garlic powder, onion powder, pepper, as well as the half a packet of calorie free sweetener (each packet is equal in sweetness to two teaspoons of sugar). I recommend you use a butter knife to mix it so that you can easily use it to spread on the pita, it mixes pretty thoroughly too. Once the ingredients are combined well spread over pita pocket bread. You can taste the sauce and decide whether or not you want to add a little salt. Top the sauced pita with the crumbled goat cheese. Thats it! You can also experiment with putting it in a toaster oven under a watchful eye if you're not pressed for time. Fresh basil could also be neat! I am only including a very basic recipe though... Delicioso! I didn't have tomato paste so I made a reduction from Classico's Vodka Sauce &~ added fresh garlic & onion. I prefer french bread; scooped out the inside to the bare shell. Grilled 4 ozs. thin chicken slices, added grilled veggies and used my G. Foreman Grill for 4 minutes. 2 servings - 10/5/09

I make this all the time using whatever I have on hand: feta, fresh basil and dried oregano from my garden, onions, minced garlic, Italian seasoning, sea salt, cheese singles, etc. I omit the sweetener though. It works well in the toaster oven at 350 for 10 minutes. A quick and delicious lunch! - 7/12/10

Ive lightened up on the artificial sweeteners myself, but it is still nice here and there. Its actually low cal enough that you can add a tablespoon of agave!!! Mmmmm. I just like sweet sauce :)

A very good base to add your favorites to. Cheese is not technically vegetarian, although some vegetarians eat milk and cheese (lacto-ovo vegetarians), true vegetarians eat no animal products at all. - 10/18/09
