Walnut Banana Spelt Muffins (Vegan)

Dry:120g (1 cup) White spelt flour110g (1/2 cup) unrefined granulated sugar1/2 tsp baking powder1/4 tsp baking soda1/4 tsp salt1 tsp cinnamon1/2 tsp allspice30g (scant 1/3 cup) walnut piecesWet:1 small banana, mashed125ml (1/2 cup) light soymilk 2 tbsp rapeseed (canola) oil3/4 tsp vanilla extract1/2 tsp orange extract (optional)1/2 tsp cider or white wine vinegar
Preheat oven to 180C/350F.
Mix dry ingredients in a large bowl. Whisk together wet ingredients in a jug and pour into dry.
Mix until just combined.
Divide between muffin tins lined with paper cases. I filled then 3/4 of the way up and got 7.
Bake for around 25-30 minutes, or until a skewer just comes out clean.
Leave to cool in the tin for at least 5 minutes before transferring to a wire rack to finish cooling completely.
