Banana Oat Breakfast Cookie

Ingredients
1 banana1/2 cup chunky peanut butter1/2 cup honey1 t. vanilla1 cup oats1/2 cup whole wheat flour1/4 cup nonfat dry milk powder2 t. cinnamon1/4 t. baking soda1 cup raisins
Directions
12 cookies - 1 per serving

mix wet ingredients, then mix dry ingredients and combine the two. Stir raisins in last. Spray cookie sheet. Scoop 1/4 cup amounts onto cookie sheet, flatten. Bake 350 degrees for 15 minutes. Cool and store.

    We liked this because it is soft and chewy. You can use craisens, dried blueberries whatever you have on hand instead of raisins. Another plus side to this recipe is the fact it only makes 12 servings. That is great for just the two of us. - 10/29/09
