Flat Buckwheat Balls

Ingredients
1 cup of previously cooked or soaked buckwheat, whole groat1/4 cups of grated mozzarella cheese, part skim milkOne medium sized eggA low fat coating, such as dried bread crumbs, cereal crumbs or bran (Nutritional value is for 1/2 cups of toasted wheat bran, but you can use a gluten free coating, too)
Directions
You need previously cooked or soaked, and cooled buckwheat for this recipe! Buckwheat needs to be dry and cold for the integrity.

Mix buckwheat, grated mozzarella and egg in a bowl. You may want to add salt and spices to taste at this point. If you do, add them to your food tracker for accurate tracking.

Make walnut sized balls (I make 16 balls and flatten them so that they will cook more easily).

Roll the balls in the coat of your choosing.

Cook the balls in a non-stick pan with a non-fat cooking spray for about 5 minutes. If you use any oil, don't forget to add that separately to your tracker.

Makes 4 servings. (Each serving is 4 balls.)
