Barley Salad

Ingredients
Barley, pearled, cooked, 3.25 cup Onions, raw, 1 cup, chopped Cucumber (with peel), 2 cups choppedAthenos Reduced Fat Feta Cheese, 3/4 cupNewman's Own Lighten Up Light Balsamic Vinaigrette Dressing, 4 tbsp
Directions
Cook the barley per directions on package. Use 1 cup barley to 3 cups cooking liquid.

Add onion, cucumber, feta, and Newman's Own Light Balsamic Vinaigrette and stir. Chill overnight for flavours to marry.

Makes 3 2-cup servings.
