Blueberry Pie

1-1/3 c. whole wheat flour1/4 tsp. salt4 T. butter, cut into small pieces1/2 c. fat free plain yoghurt1 tsp. cider vinegar4 c. blueberries1/4 c. sugar (if needed)1 tsp. cinnamon1 T. lemon juice 2 T. whole wheat flour1 tsp. cornstarch
For dough, combine flour and salt; cut in butter till mixture resembles small crumbs. Stir together yoghurt and vinegar; stir into flour till dough forms a ball. Chill dough while you mix filling. For filling, combing blueberries, sugar, cinnamon, and lemon juice and toss well to coat. Mix together flour and cornstarch and add to berries, tossing well to coat. Roll dough out into 2 9-inch circles. Place once circle in pie plate, add filling, top with remaining dough and flute edges. Cut vents for steam, brush with milk and sprinkle with sugar if desired. Bake at 425 for 15 minutes, then lower heat to 375 and bake till crust is golden (about 45-50 minutes). Makes 8 servings

CIARAMEI
This satisfies the craving for pie and the crust was very good, despite being low-cal. I'm going to keep working with this recipe. Next time I will try substituting at least some of the whole wheat flour with white and cutting back the cinnamon while adding other spices, like nutmeg or vanilla. - 6/23/08
