Mozzarella/Jasmine Rice Stuffed Pork Chops

Ingredients
*Pork, fresh, loin, top loin (chops), boneless, separable lean and fat, raw, 2 chop, excluding refuse *10-minute Success Jasmine Rice, .5 cup Mozzarella Cheese, part skim milk, 2 oz enough bread crumbs to coat pork rolls
Directions
Prepare Jasmine rice according to directions on box. In the meantime, pound your chops thin and season with your favorite seasoning (i use Montreal Pork Rub) on both sides then top each chop with 1 oz of finely shredded mozzarella cheese. When rice is ready, drain and then place 1/4 cup of rice on top of the cheese then roll the chops up and secure with toothpicks. Coat Pork chop roll in bread crumbs and place seam down in a glass baking dish. Bake in a 375 F degree oven until internal temperature reaches 160 F degrees. Let rest 5 minutes before slicing to serve.
