Sweet Potato and Black Bean Burritos

Ingredients

1 tbsp olive oil1 cup onion, chopped4 cloves garlic, minced6 cups black beans, drained2 cups water3 tbsp chili powder2 tsp ground cumin2 tsp yellow mustard1/4 tsp cayenne pepper3 tbsp low sodium soy sauce4 cups cooked and mashed sweet potato12 (10 inch) Low Carb Whole Wheat Burritos
1) Preheat oven to 350 degrees F.
2)Heat oil in a skillet and saute onion and garlic until soft. Stir in black beans and water, and heat until warm. Remove from heat and drain reserving 1/2c liquid.
3)Stir in chili powder, cumin, mustard, cayenne, soy sauce and reserved liquid in a small bowl. Add to bean mixture.
4)Divide mashed sweet potatoes and bean mixture evenly between the warm tortillas. Top with cheese. Fold up into burritos.
4)Bake in the oven for 12 minutes and serve.

Very tasty - especially the spices that go in the black beans. I just need to figure out a way to make a low-cal, low-fat sauce. I might sprinkle a little 2% cheese on it too - calls for cheese in the instructions but not in the ingredient list. Definitely making again though! - 12/3/07

I make black bean burritos often, and LOVE them! To avoid having the texture too mushy, I use cubed sweet potatoes and try to keep the beans intact. To offset the sweet flavor, I use LOTS of chilis (usually jalapenos) to kick up the spicyness factor. I think I'll make some today! - 10/23/08
