Salmon Patties

Ingredients
1 can salmon (drained)1 egg (lightly beaten).5 cup crushed saltine crackers.25 cup minced fresh onion (optional)Salt & Pepper to tastePam cooking spray
Directions
In medium bowl mix all ingredients until blended. Use hands to form four or five 4" patties. Spray skillet with cooking spray and cook over medium heat until both sides are lightly browned. Serve warm.
