cheesy beef enchiladas

2 lbs lean ground beef4 cups cheese40 oz (2 cans) enchilada sauce20 soft taco four tortillasfat free sour cream (optional)sliced jalepenos (optional)hot sauce (optional)
brown ground beef
add 1 can of enchilada sauce
add 2 cups cheese to beef mixture
spoon mixture in tortillas (approx .25 cup each)
roll and place in pan
cover with remaining sauce and cheese
bake at 350 until cheese is melted, about 30 minutes
I prefer using medium or sharp cheddar cheese. You can lower the calories by switching to your favorite low-cal cheese. Or you can omit the cheese completely.
We like to spice it up with a few slices of jalepenos and Frank's Red Hot!
