Scones (Whole Wheat, Vegan)

Ingredients
2 cups whole wheat flour, plus extra for dusting1/4 cup raw/turbinado sugar, plus 2 tablesppons to sprinkle on top1 teaspoon baking powder1/4 teaspoon baking soda1/2 teaspoon salt1/2 cup Earth Balance (other margarines will not work as well)1/4 cup soy or rice milk (unsweetened)
Directions
Preheat the oven to 400F.

Mix dry ingredients together, making sure there are no lumps in your baking soda or baking powder.
Rub in Earth Balance with your fingertips until the dough has a crumb like texture.
Pour in the soymilk a little bit at a time, mixing as you go. You only need to add enough soymilk for the dough to stick together.

Dust your countertop (or a large cutting board) with flour, and drop the dough onto the floured surface. Sprinkle a little more flour on top and form the dough into a circle about 1.5 inches thick. Cut the circle into 8 triangular slices like pie wedges.
Place the scones onto a cookie sheet at least an inch apart. Sprinkle tops with additional sugar.

Bake for 15-20 minutes, until golden on top and a toothpick inserted in the center comes out clean.

    This should work just fine with Almond Milk. Sometimes I even use water if I'm out of soy/rice milk, and they still turn out great!

    I used milk in place of the soy milk and Splenda in place of the sugar. For the sprinkled sugar, I used Xylitol. I also used light, spreadable butter. I had to add more than 1/4 cup of milk to get the batter to form. I put 3-4 white choc chips on top of each scone. (A tad dry but good w/ coffee.) - 1/4/12

    Really good basic recipe. I made this batch with a cup of blueberries and 1/2 cup of walnuts. I did end up having to use about twice the soy milk to get the dough to stick together. Looking forward to trying different combos. - 4/22/10

    For a flour substitute, try soy flour, or a combo of potato and tapioca flours. They're what's in a lot of prefab GF/special diet mixes. Hope this helps! :) - 9/21/09
