L.R. Apple cake with flax and oat bran

5 cups tart apples, chopped200g (1 cup) sugar160g (1 cup) dark raisins2 T. oil2 tsp. vanilla 1 egg, beaten1/2 cup buttermilk60g (1/2 cup) whole wheat flour45g (1/2 cup) ground flax seed110g (1 cup) oat bran1-1/2 tsp. baking soda1/2 tsp. salt2 tsp. cinnamon
in a large mixing bowl, combine apples with sugar, and raisins. Let stand 30 minutes or overnight.
Preheat oven to 350. Lightly grease a 9"x13" baking pan.
Stir into apple mixture, oil, vanilla and egg. Combine dry ingredients and stir into apple mixture alternately with the buttermilk. Stir just enough to moisten dry ingredients. Turn batter into pan. Bake 30-35 minutes or until cake test done. Cool slightly before serving. Makes 12 large pieces.
