6 ounces dried bowtie pasta1 onion, medium, chopped1 cup sliced mushrooms, any variety2 cloves garlic, minced1 tablespoon olive oil4 cups sliced/chopped fresh spinach1 teaspoon fresh thymeground black pepper to taste2 tablespoons Parmesan cheese
Cook pasta according to directions, drain. In a large skillet, cook mushrooms, onion, and garlic in olive oil over medium heat for 2 or 3 minutes, Stir in spinach, thyme, and pepper; cook until spinach is slightly wilted (1-2 minutes). Stir in cooked pasta and toss gently to mix, Sprinkle cheese. Makes 4 servings.
