Katz Vegetable Bake

1 teaspoon extra virgin olive oil1 cup onion, cut into chunks.1 cup frozen green beans1 14.5-ounce can diced tomatoes2 cups zucchini, cut in chunks1 roasted red bell pepper, chopped1 eggplant, cut into chunks (optional)1 cup sliced mushrooms (optional)1 tablespoon dry basil
Preheat oven to 375 degrees. Lightly oil a casserole dish with a lid.
Cut the vegetables into about 1/2 to 1-inch chunks.
Saute the onion to soften a bit.
Combine all ingredients in prepared dish, cover and bake until vegetables are tender, about 60 minutes, stirring once or twice.
